Strawberry Layered Cake

This delicious and easy to make strawberry layer cake recipe is the ultimate summer dessert. It’s refreshing, full of strawberry deliciousness, and has the perfect balance of sweetness.

Cake Ingredients:

  • flour and butter for pan
  • 1 cup of butter (2 sticks)
  • 2 cups sugar
  • 4 large eggs, separated
  • 3 cups flour
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1 cup whole milk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 2 containers of fresh strawberries (or one large container)
Frosting Ingredients:
  • 8oz mascarpone cheese
  • 2/3 cup granulated sugar
  • 2 cups heavy whipping cream
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon almond extract


  1. Preheat oven to 350 degrees, and grease 2 9-inch baking pans.
  2. Beat butter until fluffy, add sugar and beat well again. Then add egg yolks on at a time until blended.
  3. Mix together dry ingredients, then add to butter sugar mixture. Stir in extracts.
  4. Whip egg whites, add in 3 parts to mixture. Spoon batter into cake pans.
  5. Bake for 28-32 minutes, or until tooth pick inserted in center comes out clean. Cool in pan for 10 minutes then on wire rack for about an hour.
  6. Cute off stem of the strawberries.
  7. Make frosting. Stir mascarpone and 1/3 cup sugar in bowl. Beat whipping cream and extracts in separate bowl until foamy, the add remaining sugar until peaks form. Fold into mascarpone mixture in 3 parts.
  8. Place first layer of cake on serving platter, spread with frosting, and place strawberries flat side down on icing.
  9. Spoon frosting into ziplock bag, cut hole in corner, and fill gaps from strawberries with icing.
  10. Place second layer of cake, add more frosting, and top with whole or sliced strawberries.
