Avocado Ice Cream, Because Why Not?

  • 2-3 fresh avocados – seeded & peeled
  • ½ cup of granulated sugar
  • 1 tablespoon fresh lemon juice
  • 1 ½ cup coconut milk
  • 1 cup cold heavy cream
  • Pinch of salt

Avocado is everywhere. Whether it comes in the form of guacamole or as an additional ingredient to your salad or sandwich, more people are welcoming the superfood into their meals and diets. There’s a variety of different ways to incorporate it into a meal, but perhaps the most interesting way to do so that I have seen is in the form of ice cream.

Upon finding out about this concoction, the Tasty Table kitchen had to give it a shot! We’ve used avocado to enhance sandwiches, wraps, and salads, but never dessert. This could either turn out to be delicious, or disgusting.Luckily, it was very simple to make and a variety of recipes online lead us to this excellent and delicious treat.

As far as ingredients are concerned, you should grab a couple of avocados (we recommend 3 for this recipe), coconut milkhoneycold heavy cream and lemon juice. You’ll also need granulated sugar and table salt to slightly alter your flavor as desired.

Using a food processor, simply puree the ingredients together until smooth. Once your consistency appears similarly to your over-the-counter ice cream, your next step is simply to toss into a freezer-safe container and allow to freeze for about half a day (about 4-6 hours). Those with an ice cream machine can simply follow the instructions of the machine itself – this should only take a few minutes. Keep in freezer longer to strengthen the texture.

You’ll find yourself with a tasty treat that is filled with great nutrients and isn’t too fatty or heavy like your regular ice cream dessert, and is sure to start a conversation at your next event! It may be too late for a Cinco De Mayo treat, but definitely tastes great during any summer event!
